Brown Rice Pizza Dough

So, penny pinching aside as I am on sick leave and pogey, I found a fantastic, cheap, gluten-free alternative; and believe it or not this tastes good!!! Okay, it is a little labour intensive, and greatly time consuming but when you are sick you have all the time in the world, right?

Brown Rice Pizza Dough
  1. ½ cup rice flour

  2. ½ cup ground flax-seeds

  3. 1 tsp baking powder

  4. ¼ tsp salt

  5. 6 tsp of herbs for taste!

  6. ¼ cup of water

  7. 3 Chia eggs (3 Tbsp ground chia seeds + 9 Tbsp water)

  8. 3 Tbsp extra virgin olive oil

  9. ½ cup cooked brown riceDirections: Preheat oven to 425˚. Line a cookie sheet with with parchment paper. This will save your life and sanity. Mix the dry ingredients. In a separate bowl, mix the wet ingredients including the Chia eggs, Add wet to the dry and let your Kitchen Aid mixer do all the work. Rest for 15 minutes. You deserve it. Stir in the brown rice until well combined. The consistency will be like porridge, not at all like dough. Using a spatula, spread the mixture on the prepared pan and bake for 15 minutes. Be super nit picky about keeping a very consistent depth of dough. Add toppings and cook for an additional 15 minutes. Allow to cool for ¼ of a minute. Slice and dice, and enjoy!!
